This coffee comes from growers in the COMSA cooperative in Honduras, known for using a washed method that brings out a mellow, caramel-like sweetness. COMSA is dedicated to sustainable agriculture and community development, and even operates its own multilingual school to support the education of children and young people in the region.

For this washed style, everything begins when the coffee cherries are harvested. Members of COMSA are encouraged to pick only fully matured cherries, identifiable by their deep, wine-red colour.

Once each day’s harvest is complete, farmers bring the cherries to COMSA’s central wet mill, where activity peaks in the early evening, roughly between 4pm and 10pm. The cherries then rest overnight in a receiving hopper, allowing them to ferment naturally inside their skins for roughly 12–16 hours. The following morning, the fruit is removed from the seeds through depulping. After that, the beans—still in their parchment—sit in clean tanks for another fermentation stage without any added water, lasting about 24 hours. On the next day, the beans are washed and then laid out on patios or raised drying beds to dry in the sun for roughly 6–8 days, depending on the climate.

Yes, we use fully-recyclable matt black pouches, or 1kg white kilo bags. We send your coffee in nice cardboard boxes.

Since the coffee is freshly-grounded, we normally dispatch orders Wednesdays and Fridays.

Please allow up to 2-4 business days from the date of your order, although it is usually quicker.

Delivery usually takes 1-3 working days within UK, and 5-10 working days for international orders.
